TIME MARKET TOASTED BAGUETTE WITH ROASTED RED BELL PEPPER AND TOMATO TAPENADE (ACCOMPANIED WITH A PERFECT POACH)

For the Tapenade:

1 red bell pepper roasted

(I do this right on my gas stove using tongs, for quick and easy)

1 roma tomato

1 tblspn of olive oil

1 tspn of herb de provence

salt

Mix all ingredients in a food processor.

Toast bread and crack open an egg in boiling water and vinegar. Let sit for a minute and then turn down the flame and cover until firm.


A VERY REFRESHING MANGO, APPLE, AND BASIL SALAD DRESSED WITH COCONUT MILK AND HONEY DRESSING

Chop desired amounts of all ingredients. In a small bowl mix ¼ cup of coconut milk and a heaping tblspn of good honey.

Mix together and enjoy on a warm day.


THE ULTIMATE COMFORT OF A TURKEY POT PIE

 For the pie crust

 2 cups of flour

⅔ cup of shortening (because, let’s face it, it’s the best)

1 teaspoon of salt

¼ cup of Ice water

In a large bowl combine the flour and the salt, then add the shortening and ice water. Get in there with your hands or a couple of knives to mix dough well and consistent. This recipe makes two pie crusts. Form into a disc shape and place in the refrigerator overnight.

1 cup of:

shredded cooked turkey

chopped asparagus

chopped yellow onion

shitaki mushrooms
